The owner of La Castiglia Restaurant/cafè is Luca Banchio, a well known figure in the restaurant industry in Saluzzo. After many years experience in several restaurants in the area, culminating in the management of the Osteria del Molar in Envie, Luca rose to the challenge with all his experience and with a fresh enthusiasm.
The Chef will delight you with the typical dishes of Piedmontese tradition alongside more innovative proposals. The menu ranges from the more classic vitello tonnato with its traditional sauce to seafood dishes such as sautéed prawns with an avocado puree and yellow and purple crisps.
A common denominator in all these proposals is the centrality of the raw materials, which are almost always local and always of the best quality. From the fresh Meditteranean fish and locally produced meat, to the fruit and vegetables from the Monviso area, without forgetting the special flours used in the preparation of the bread, breadsticks and cakes, which are all homemade.
